Bruno Paillard Champagne
The house of Bruno PAILLARD is the youngest and one of the smallest champagne
houses. It specialises in the production of high quality luxury cuvea cutees.
The annual production averages 600 000 bottles of which over 75% are exported to
22 countries - mostly in Europe, the USA, Japan and Brazil.
Wherever they are represented, the Champagnes of Bruno Paillard are exclusively
sold through traditional outlets such as restaurants and specialist stores or "cavistes".
Bruno Paillard Champagnes are produced in the traditional way from the best
possible grapes of the Champagne area. The grapes are bought from independent
growers in more than 30 villages: a richness of choice that is essential for the
best blends.
The winery - a temperature controlled glass and stainless steel building - just
outside Reims, on the road to Epernay, is modern, efficient, and dedicated to
quality.
Bruno Paillard's range offers three non vintage champagnes and several vintages,
some of which have become very rare. They are all BRUT as the house does not
produce a SEC or DEMI SEC, and the dosage is kept as low as possible in order to
respect the authenticity of the wines.
Furthermore, since 1985, each and every bottle carries the date of its deacute
gorgement , the house of Bruno Paillard is the only one to give this information
on all its wines.
Deacute gorgement : Is an operation which- after several years of ageing -
consists in extracting the sediment formed during the bottle fermentation. At
this stage, the "dosage" is added and the final cork sealed. This operation
requires the bottle to be opened, thus causing the loss of a small proportion of
carbon dioxide and its replacement by oxygen. From this date, therefore, a new
process of ageing begins which causes oxidization and eventually "madeirisation",
which is why the date of "dégorgement" is so important. We recommend that
the wine should be drunk between 3 months to 3 or 5 years after this date,
provided it has been well stored i.e. bottles lying on their side in a dark and
cool cellar.
However, a skillfully made and raised champagne will age wonderfully, developing
exquisite aromas of wood, roast or candied fruits.
